I love the freedom that we have in the culinary line.

Today was a cozy day inside. We made so many different types of food. I love the freedom that we have in the culinary line. We have rough ideas of what we want to do that day and then we divide in our own groups and get to make them. On the agenda today was making lammefrikassé which is a lamb stew and plummekake (plum cake).

But we also were able to make our own appetizers while the lamb boiled for 90 minutes. There was a bucket filled with assorted ingredients and it was our challenge to make something from it based solely off our creativity. I made lettuce wraps with mozzarella and Italian tomato chorizo sauce. It was sooo good and fun to just add whatever we wanted. Added a little balsamic, creme fraiche, basil, paprika, just what I thought would be good (and it worked!). Now I’m sad I don’t have a recipe for it 😂.

The lammefrikassé wasn’t that hard to make either. It was such a nice fall dish to make on a cozy day. It reminded me of the Norwegian version of chicken pot pie, a comfort food. I of course wrote down the recipe in my cookbook 🙃.

Then I had to sign up for an e-visa for Vietnam. The website was super laggy and kept restarting so it took up most of my afternoon troubleshooting with that. Then it would not let me login! Somehow it worked when my mom tried it though 🫣.

Tonight’s Friday-fun was 80s themed. I was DETERMINED to not succumb to the pressure of teasing my hair BUT I did 🤦‍♀️. I guess I’ll just deal with the knots some other time… Anyways, we had a selection of games, snacks (I tried bacon chips… NEVER again), music, and dancing. It was pretty fun to my surprise.
